Roasted garlic compound butter with fresh herbs- Slather on toast for breakfast or on your steak or fish for dinner!
Garlic is a flavor powerhouse by itself, but roasted garlic is another thing altogether. It's soft, buttery, and almost sweet.
The clincher here is the roasted garlic! You can tell I am obsessed with roasted garlic! This butter on plain toast is what my dreams are made of! I can eat it by the bucket!
It's a delicious condiment to have in your fridge. I put it in everything from pasta to eggs to roast vegetables. A small knob of this is perfect for finishing your steak or roast fish.
You can also cook your chicken in it, make grilled cheese, or plain old butter-toasted bread with it. Or make this easy peasy garlic bread in the Air fryer! It is a very versatile condiment to have in your refrigerator.
I have used this butter to make the filling of my hasselback potatoes or in mashed potatoes. You can also use it to make your holiday turkey or chicken roast.

Here is what you will need
Garlic - In the picture, you see mashed roasted garlic. This is a simple technique to take your garlic from average to being on steroids!
The taste is unrivaled. You can roast the garlic in the oven of do it in the air fryer. I prefer roasting the garlic in air fryer because it's quicker. Plus, I feel guilty of using a giant oven for one or two garlic pods.
Herbs- You can use whatever you have on hand - fresh or dried.
For every tablespoon of fresh herbs, you use ⅓ tablespoon of dried herbs. That's the rule because dried herbs carry a heavier punch.
Here are some of our favorite herbs to use parsley, cilantro,mint, rosemary & thyme garlic chives, and scallions
Butter -Use salted butter to make this. The butter is already evenly salted so you don't have to worry about that bit. But of course, you can use baking butter or unsalted butter, too. Make sure to add salt while mixing it up.
Equipment
We need an air-fryer or an oven to roast the garlic. We also need aluminum foil to cover the garlic. Wrap the garlic and roast at 180C or 365F for 1 hour.
Making Garlic Herb Compound Butter
This will change your breakfast game! I promise.
Here are step-by-step instructions on how to make roasted garlic herb butter.
Step 1: Roast the Garlic
You can roast the garlic in the air fryer or you can do it in the oven. Air fryer method takes only about 20-25 minutes. The oven method takes about 1 hour.
Oven Method
Cut off the tops of the garlic pod. Wrap it up in aluminum foil with a drizzle of olive oil and salt.
Bake it for 1 hour at 180C.Once done, open it carefully.You can also use confit garlic to make this compound butter.

Step 2: Mash the Garlic
Let the garlic cool before you handle it. Once it's cool enough to touch, squeeze the garlic out of its skin, as shown in the picture.
Mash the garlic using a potato masher or just your fork. Be mindful of the garlic skin. Also, look out for some of the end bits, which can be a little tough and don't mix well with butter. You can remove those bits.
Step 3 : Mix with Butter & Herbs
Chop up the herbs as fine as you can. You can also use a food processor for this. It is especially handy when using hardy herbs like Rosemary and Oregano.
Add butter to the mix. Use a fork, mash, and mix it all up.
Check salt and add more if needed.
Storage
Garlic butter can be made ahead easily. It can last up-to a couple of weeks in the refrigerator. Make sure you store it tightly wrapped up or in an air tight container.
You can also freeze this into little discs or cubes and use it straight from the freezer for hot dishes like soups and stews. It will add instant flavour to these dishes.
Hot Tip
You can freeze the roasted garlic in little ice cube trays. Once frozen, pop them in a freezer bag. You can use it up to 4-5 months!.

Equipment
- 1 Air fryer OR Oven
- Aluminum Foil
Ingredients
Roasting Whole Garlic Pods
- 3 Heads Garlic Pods Whole
- 2 tablespoon Olive Oil
- 1 teaspoon Salt
- 100 Gms Butter ½ Cup
- ¼ Cup Fresh Herbs Rosemary, Thyme, Chives, Parsley or Scallions
Instructions
Roasting Whole Garlic
- Preheat the Air fryer at 200 C /400F.
- Slice the tops off the Garlic.
- Place it in an Aluminum Foil. Drizzle oil and salt.
- Air fry for 25 minutes at 200C / 400 F or Bake in Oven at 180C /365F for 1 hour.
- Open the Aluminium foil with caution. There will be a lot of steam inside.
- Squeeze the garlic out. Mash it up. Let it cool down before you add the butter.
- To that add the room temperature butter and herbs.
- Mash and Mix it all up with a fork.Your butter is ready.

Storage
The Roasted Garlic butter will keep in the refrigerator for 3-4 weeks. It can also be frozen and used directly from the freezer. It should last 4-5 months in the freezer.How to use Compound Butter
- Slather it straight on a toasted bread! Top it up with anything you want like a boiled egg, roasted cherry tomatoes , burrata.
- Make Sandwiches or Grilled Cheese!
- Toast your bread in the compound butter.
- Add it to marinara sauces to amp up their flavors. Especially if they are store bought.
- Swap out minced garlic with garlic butter for recipes like Garlic Butter Umami Noodles. These recipes are dangerously addictive!
- Add it to your potatoes like Instant Pot Garlic Mashed Potatoes or use it instead of minced garlic in making Hasselback Potatoes in the Air fryer.
- You can also add the butter to to soups and stews.
- Add it on top of a steak or grilled meat as a condiment.
Flavors & Variations
Add- ins to choose from- Make it spicy with Paprika or ground smoked chili. If you are brave, you can also add mashed-up roasted banana pepper or Jalapenos.
- Add Truffle Oil
- Add Honey or Maple Syrup to make a sweet & salty version.
- Switch up the herbs- use herbs like mint
- You can also add Lemon Juice & Lemon Zest. Also try making this with Orange!

How to Roast Garlic without Aluminum Foil
Aluminium foil is used to create a closed atmosphere for the garlic.It sweats the garlic and also prevents it from burning.
You can do the same by using
- Parchment Paper - but wrap it twice instead
- Ramakin is covered with a lid. You can use any cake pan to serve as a lid here.
- Small Dutch ovens.
- Small cast iron pans with a lid.
