Instant Pot Crack Chicken

Instant pot crack chicken- Cheesy, creamy, addictive chicken dish that can be served as a low-carb dish, as a filling in sandwiches and creamy party dip.

This is such a versatile chicken recipe; it's keto, kids love it, and it can also be used as a dip for parties! It has so many possibilities! It's a family favorite recipe. How could it not- chicken, cheese, and bacon are a winning combination!

Scoop it up with your favorite chips and have a party dip! Make lettuce wraps or cups and have a delicious low-carb keto meal! It's comfort food at its easiest!

You can make some great shredded chicken recipes in the instant pot. Like the chicken fajitas, chicken carnitas, and our favorite salsa chicken with beans.

Ingredients for Crack Chicken

Here are the simple ingredients you need to make this delicious recipe

Ingredients needed to make instant pot crack chicken - 2 chicken breasts, green onions, cooked bacon bits, cheddar cheese, cream cheese, chicken stock, hot sauce, ranch mix, italian seasoning in cups on a grey background
  • Chicken Breast- For this recipe, use boneless, skinless chicken breasts. Chicken Thighs and Legs won't shred as well, but they are still an option.
  • Cream Cheese- Cut the block of cream cheese into cubes so that it gets mixed easily.
  • Bacon - Cooked crispy bacon bits. I usually chop the bacon up and air fry till it's golden brown and crispy.
  • Cheddar Cheese- Any cheddar would do here.
  • Hot sauce - We love franks's hot sauce. You can also use sriracha or one tablespoon of paprika too.
  • Ranch seasoning- Hidden valley ranch dressing mix works great. If you do not have the seasoning mix, use equal amounts of onion powder, garlic powder, and thyme.
  • Italian seasoning - or just salt and pepper.
  • Water or Chicken Broth- Homemade broth works best. if not, then you can use stock cubes.
  • Scallions or green onions- You can also use chives if you have one.

How to make Crack Chicken in Instant Pot

It's super simple!

Step 1: Pressure cook

Add broth, chicken, and Italian seasoning in the instant pot and pressure cook on high pressure for 8 minutes.

This will make this chicken super soft and shreddable.

Step 2: Shred & Saute

Remove the chicken from the pot and shred it using two forks. Another easy way to do this is in the stand mixer or hand mixer.

Press cancel and then press the saute button.

Put the chicken back in the pot with the cheese, spring onions, ranch seasoning, hot sauce, and cream cheese. Use a sturdy spatula or a long ladle to give it a good mix.

Add the bacon, reserving a tablespoon of it for garnish.

Reduce the liquid until the consistency is slightly wetter than you prefer. Crack chicken tends to thicken considerably as it cools.

To make the Crack Chicken on stove top

Boil the chicken breast in chicken stock till the chicken is cooked through and shreddable. Drain the liquid and shred the chicken.

Add all the other ingredients in a heavy-bottomed pan and let the cheese melt together. Add the Chicken and stir through! Love cheese? Then you must try making my stuffed mini peppers recipe. It is a great keto appetizer!

Tips for perfect Crack Chicken

Air fry that bacon for it's crispiest version ever! And reserve some as a garnish.

Serving Crack Chicken

This ultra-creamy chicken dish can be served in so many ways. Here are some of my favorites

Lettuce Wraps - Easy keto meal with fresh, crunchy lettuce leaves, topped with crack chicken.
Crack dip- Serve it as a creamy chicken dip with carrot and cucumber sticks.
Sandwich filling - This creamy chicken is a great child(and adult!) approved sandwich. You can serve it cold between soft bread or hamburger buns for parties and gatherings.

You can also serve this over white rice and make cucumber boats with it.

Storing Crack Chicken

This creamy crack chicken can be stored in the refrigerator in an airtight container for 4-5 days.

It also freezes beautifully. You can flat freeze it in a freezer bag or freeze individual portions in an ice cube tray.

Just microwave to use.

Equipment

  • Instant Pot

Ingredients 

  • 1 lbs Chicken Breast About 500 gms; 2 chicken breasts
  • ½ Cup Chicken Broth or water
  • 8 Ounces Cream Cheese about 1 cup; cut into cubes or add spoonfulls.
  • 1 Tablespoon Italian Seasoning
  • 2 teaspoon Hot sauce
  • 1 Cup Cheddar Cheese
  • ½ Cup Green Onions Scallions
  • ¼ Cup Bacon Cooked
  • Salt as per taste

Instructions

  • Cook Bacon as per instructions.Set aside and cut it into bits.
  • Add the broth to the inner pot of the instant pot.
  • Place Chicken breasts and italian seasoning on top.
  • Close the lid and select Pressure cook for 7 minutes on high pressure.
  • After the cooking time is up, let the pressure release naturally for 3-5 minutes, after which open the pot.
  • Remove the chicken from the pot and shred it with forks. Alternatively, you can use a hand or a stand mixer to shred it quickly.Press cancel.
  • Select saute mode. Add the remainng ingredients- cheddar cheese, cream cheese, cooked bacon and green onions.Give it a mix.Re(serve some green onions and becon for garnish.)
  • Using a strong ladle or spatula, give everything a mix.The mixture will appear a bit watery at first but as it mixes, it becomes thicker.
  • As the chicken cools, the dish becomes even thicker.Garnish with reserved green onions and bacon bits.

Notes
