There is a funny back story to these Homemade Dark Chocolate Peanut Butter Cups...
I and my husband once had a tiff at an airport.I wanted to stop and buy some Reese Peanut Butter Cups but he didn't want to stop cause we were very late and at an unfamiliar airport.But I was in a pig-headed mode and adamant cause you don't get these in India,I couldn't care less about the fact that we already had tonnes of chocolate in our bags or the fact that we could potentially miss our flight home or at the least might have to run lugging up the baby and allot the gate.I forget which airport this was but it was one with those with gazillion gates and about a kilometre long walk way but that didn't matter.I had spotted Reese Peanut Butter Cups and I wanted them.
After some cajoling and some well-engineered blackmail from my side he relented and bought me some candy.(Just to clarify, I could have bought the candy myself but he had the dollars and I carried our precious cargo, the baby.)Once I had the candy in my hand I was like a child tailing behind him trying to open the pack and run at the same time.I think I finished half a pack on the flight and when I landed in Bangalore I spotted these chocolates, if a tad bit costlier, in our desi duty free.I obviously didn't tell him that but instead I elicited a promise that whenever he travels abroad he will buy me some MnMs in cute little tin boxes and Peanut ButterCups.
That was before I realized they can be made at home minus all the sugar and preservatives. So my standing instructions have been suspended. Atleast for the peanut butter cups. The best part of making these at home is that you are the boss and you decide which chocolate you want to use..So I fished out my precious 70 percent dark chocolate from my secret stash and made the cups with that(so am not sharing!).Needless to say I gobbled so many that I couldn't sleep after but those are small little downsides for the love of chocolate.

Though I used super dark 70 % cocoa chocolate you can use Cadbury bourneville or Amul's Bitter Chocolate but if you are not a fan of bitter chocolate use any milk chocolate.That should work too.
The recipe below is very forgiving and even if you botch it up the result will be delicious.Hope you enjoy it.

Homemade Peanut Butter Cups
Ingredients
- 1 Cup Chocolate-in small pieces
- 1 tablespoon Coconut oil I swear you won't notice the coconut flavour in these
- 1 Cup Natural Peanut Butter
- 1 teaspoon Honey or Maple Syrup
Instructions
- Melt the Chocolate with 1 tablespoon coconut oil in the microwave in short bursts of 30 seconds.
- Between each burst mix the chocolate with a spoon.
- Once melted, Pour about 1 teaspoon of the melted chocolate in cupcake liners.Freeze this for 10 minutes.
- Meanwhile microwave the peanut butter and honey.If using store bought peanut butter you can omit the honey as they are already sweetened.
- Over the frozen chocolate pour over some peanut butter.If the peanut is not of the pourable consistency then make balls of it and flatten it on the chocolate.
- Next pour over 1 tablespoon of chocolate to cover the coat the peanut butter completely.
- Refrigerate for 10-15 minutes before you start gobbling them up
