Equipment

Ingredients

  • 1 Cup Water Melon cut into balls with a melon baller
  • 1 Cup Musk Melon cut into balls with a melon baller
  • ¼ Cup Fresh soft cheese ricotta, fresh mozzarella or feta
  • 10 Mint Leaves for Garnish

Lime & Mint Vinaigrette

  • 2 tablespoon Juice of 1 lime 2 tbsp
  • 2 tablespoon Extra Virgin Olive Oil
  • 20 Fresh Mint Leaves julienned
  • ½ teaspoon Salt to taste

Instructions

Lime and Mint Vinaigrette

  • Cut the mint leaves into strips(Chiffonade) using a sharp knife.
  • In a bowl, mix together the juice of lime, olive oil, mint leaves and salt.Whisk to combine.

Salad

  • Cut or scoop the melons using a scooper into bite size pieces.
  • Take a large salad bowl.Add the melons.
  • Spoon over the dressing and mix it with your hands.
  • Crumble the ricotta cheese on top.Garnish with the left over mint leaves.

Notes

You can substitute watermelon with any kind of sweet melon or large fruits- Honeydew melon, pineapple, mango,
Variations
Melon & fresh mozzarella salad- Add fresh mozzarella balls instead of feta cheese.Finish with a drizzle of balsamic glaze.
Melon salty prosciutto salad- Add rashes of prosciutto for an Italian twist.
