Ingredients

Salt as per taste
Instructions
Mix the chicken with smoked paprika, lime juice, 1 teaspoon salt and Rosemary and set aside.
Insta Pot Version
Using the sauté function, heat the Instant pot.Once hot add the oil.
Add the garlic and chopped onion.Saute till golden.
Add the marinated chicken and mushrooms.Mix it together and cook on high for 10 minutes.
Switch off the Saute function.Add ¾ Cup* of water.
Add the tomatoes, quinoa, green capsicum.Check salt.Also add more chilli for extra kick.
Close the lid and pressure cook for 5 minutes.When finished cooking, quick-release pressure according to manufacturer’s directions
Pressure Cooker Version
Heat the pressure cooker on high.Add the oil.
Add onion and garlic. Saute till golden.
Add the Chicken thighs and brown it for 10 minutes.Add ¾ Cup of water.
Add rest of the ingredients- mushrooms,capsicum,quinoa.Check the salt.Add more chilli for extra kick.
Pressure cook for 10 minutes
Notes
Reduce the amount of water to ½ Cup if you like drier consistency
