Quinoa Chocolate Cake

Extremely fudgy,Dark Chocolate cake made with Quinoa.This cake is flourless and dairy free making it suitable for Gluten free and lactose free diets.

Ingredients

  • 50 Gms Dark Chocolate
  • ¾ Cups Dry Quinoa
  • ½ Cup Orange Juice
  • ¾ Cup Coconut Oil or Vegetable Oil
  • 4 Eggs
  • 2 teaspoon Vanilla extract
  • 1 ½ Cups Sugar
  • 1 Cup Cocoa Powder
  • 2 teaspoon Baking Powder
  • ½ teaspoon Salt

Instructions

  • Boil the Quinoa as per the packet Instructions.¾ Cup of dry Quinoa will yield about 3.5 Cups of Cooked Quinoa.
  • Preheat the oven to 180 degrees C.
  • Melt the chocolate in a double boiler or a microwave.Cool it a bit till it's not just warm.
  • In a blender,Add the cooked quinoa first followed by orange juice, eggs and then rest of the ingredients along with the melted chocolate.
  • Blend till you get a smooth batter-like a smoothie.The more you blend the better the texture of the cake.So take your time here(about 5-10 minutes) and keep scraping the sides with a spatula.
  • Prepare a baking tin.If using a bundt cake-brush the sides with oil and sprinkle cocoa powder so that the cake comes out easily.
  • Bake the cake for 50 minutes at 180 degree C or 350 degree F.
  • Remove & Place on the wire rack.Let it cool before removing from the baking pan.

Notes

Cooked Quinoa*-Boil ¾ cup quinoa in 2 cups of water till well done.Takes about 20 minutes on medium flame.This can be done a day ahead.
