Ingredients
Hummus
2CupsBoiled ChickpeasCanned or Boiled at home
1tablespoonTahini
3-4tablespoonLemon JuiceAbout ½ a Lemon
1teaspoonSaltAdjust as per taste
1CupIce Cubes
Roasted Olives
1CupMixed OlivesKalamata, Black and green
2tablespoonOlive Oil
4-5Garlic Cloves
½Lemon WedgeQuartered
1teaspoonChilli Flakes
2-3SprigsThymeor 1 teaspoon dried Thyme
Instructions
First, heat the chickpeas in a microwave or a pot till it's hot and heated through.
Drain the chickpeas.
Add the chickpeas, tahini, lemon juice,salt and 1 cup ice cubes to the food processor or blender.
Blend till it's smooth.This will take 10-12 minutes*.The Hummus should be smooth and of the same consistency as buttercream.
Add more water if needed.
Roasting Olives
While your chickpeas are heating through, add the olives, lemon wedge, olive oil, chili flakes, garlic, and herbs to a baking dish.
Roast at 180 C or 365 F for 20-25 minutes till the lemon has released its juices.
Assembly
Scoop the hummus on to the serving dish.Something shallow works better.
Add the roasted olives, garlic and lemon wedges on top.
Drizzle the left over olive oil and jucies from the roasting pan.
Serve with crisps and pita bread!
Notes
*Serving size is an estimate.** Texture of Hummus should be smooth.It should slide off the spoon easily.The closest texture to hummus is buttercream.***Using ice cubes helps in texture.It also helps in making sure there is not too much steam while blending the hot chickpeas.
