Cut the potatoes into wedges.
Boil 5 cups of water. Add 2 tablespoon salt.
Add the potatoes and cook till a knife can be inserted easily.
Drain the water and transfer the potatoes into a bowl with lid. Give it a gentle shake. The potatoes will become rough.
Preheat the oven to 240C 500F.
Add the potatoes to a baking tray along with the 2 tablespoon of oil.Gently mix to coat all the potatoes.
Bake in the oven, in middle rack for 30 minutes. Remove midway and give it a shake.
Once the potatoes start to turn golden, they are done.
Mix toghether the chili powder, turmeric and mango powder with leftover 1 tabalespoon oil. Taste the potatoes and add salt if needed.
Add the spice mix to the potatoes .Mix gently to coat all the potatoes.
Bake for another 5-10 minutes to cook the spices.And your crispy indian style potatoes are ready!
