cranberry chicken pecan salad

Ingredients

  • 1 lbs Chicken Breast 2 chicken breasts; cooked
  • 2 Apple about 1-2 cup; sliced
  • 1 Cup Celery about 2 stalks
  • ½ Cup Cranberry
  • ½ Cup Pecan
  • ½ Cup Mayonnaise or greek yogurt
  • ½ Cup Green onions
  • 1 tablespoon Dill
  • 1 Italian Seasoning or garlic powder with salt and chili flakes
  • 3 teaspoon Lemon juice or apple cider vinegar

Instructions

Cooking chicken

  • Boil the chicken in salted water till its cooked and tender, about 10-12 minutes.

Mixing Salad

  • Cut the chicken into bite size pieces and let it cool down.
  • In a large bowl, whisk toghether the mayonnaise or greek yogurt, italian seasoning and salt.
  • Chop the celery, green onions and apples.
  • Add everything to the bowl with the whisked mayonnaise.Give it a good toss, coating everything withthe silky mayonnaise dressing.

Notes

  • Chicken - Feel free to use cooked chicken or, as shown in the recipe, boil two chicken breasts and chop them up into bite-sized pieces. You can also use cooked leftover Thanksgiving turkey or shrimp instead of chicken breasts.
  • Crispy Apples - granny smith apple add the most gorgeous tartness that this salad needs and loves! Feel free to experiment with other apple varieties, too.
  • Nutty Pecans- Walnuts, sunflower seeds, and pepitas are great options here.
  • Crunchy Celery & Green onions add a great amount of fiber and crispiness to an otherwise creamy salad.
  • Sweet Cranberries - I have used dried cranberries. These are not coated with sugar; I find them perfect for my pallet.
  • Mayonnaise - Always read the ingredients while using mayonnaise. Oftentimes, it's just oil and emulsifiers. That is why, if I am not serving this dish on an important occasion, I swap the mayonnaise with plain Greek yogurt or sour cream. You can also go half and half with mayonnaise and yogurt. You can also make your own mayo quite easily.
  • Lemon - Use fresh lemon , apple cider vinegar or red wine vinegar. I also like to zest the lemon for flecks of freshness in the salad.
  • Dill - This is the secret ingredient here. I swear it lifts the dish from good to amazing!
