Burrata Bruschetta

Burrata Bruschetta - Toasted bread topped with marinated tomatoes and Creamy italian soft cheese.

Ingredients

  • 5-6 Slices Bread Italian or sour dough bread;
  • 1 Ball Burrata Cheese Italian Fresh soft cheese
  • 2 Cups Tomatoes mixed- cherry tomatoes and heirloom tomatoes
  • 2 Tablespoon Olive Oil divided between marinated tomatoes and toasted bread
  • 1 Tablespoon Balsamic Vinegar
  • ½ Cup Basil leaves loosely packed
  • ½ Teaspoon Salt flaky sea salt
  • ¼ Teaspoon Black pepper freshly cracked
  • 2-3 Cloves garlic
  • 1 Tablespoon Balsamic glaze

Instructions

  • In a large bowl, add the sliced tomatoes.
  • Cut the basil leaves into thin shreds.Add them to the sliced tomatoes.
  • Dress with olive oil, salt, pepper and balsamic vinegar.Give it a toss.
  • Meanwhile, toast the bread with olive oil till its golden brown and crispy.
  • Top the bread slices with marinated tomatoes.
  • Tear the burrata and place it on top of the tomaotes.
  • Garnish with fresh basil leaves and finsih with a drizzle of balsamic glaze.

Notes

Tomatoes-  Any fresh, rips tomatoes will work.I have used cherry tomatoes.
To make balsamic glaze at home, simply take ¼ cup of balsamic vinegar and 1 tablespoon of sugar. Simmer it till it thickens and becomes like syrup. Keep in mind that the reduction will thicken as it cools. If it's too thick, dissolve it with some water.
Tip- If you don't have access to fresh tomatoes, use a teaspoon of tomato paste, spread it over the bread while toasting it.Top with fresh burrata and you are good to go!
