This is a quick paleo and whole 30 approved breakfast spinach frittata recipe

Ingredients

  • Onion
  • Yellow Pepper
  • 2 Eggs
  • Salt to Taste
  • Olive oil-1 tsp

Instructions

  • Break the eggs in a bowl.Whisk whisk whisk.Add the leftover mushroom and spinach sauce.(or a mixture of pureed blanched spinach and some mushrooms)
  • Add the sliced yellow pepper and onion.
  • Heat the low pan.Drizzle oil and swirl it around to coat the pan.
  • Pour the egg mixture in the pan.Move the egg and veggies around to make the distribution equal.On a low-medium flame cook it covered with a lid for 3 minutes
  • At this stage the fritata should have risen a bit.Free the edges with a spoon or kinfe.
  • If you are a pro flip it.If you are like me then heat another skillet or a flat pan.Drizzle some oil and simply flip the pan on the skillet with the uncooked side down.Cook for another 2 minutes and you are done.
