Instant Pot Quinoa Chicken

Instant Pot Quinoa Chicken Bowl -All in one Healthy one pot wonder which can be made in Instant Pot or Pressure Cooker

Ingredients

  • 1/2 Cup Quinoa
  • 2 Chicken Thighs Cut into 1 inch size pieces
  • 1 tsp Rosemary
  • 1 tsp Smoked Paprika
  • 1 Lime- juiced
  • 1 tbsp Olive oil
  • 2 Garlic Cloves- Minced
  • 1 Small onion chopped
  • 1 Cup Mushrooms
  • 3 Ripe Tomatoes roughly quartered
  • 1 Green Capsicum- diced
  • Salt as per taste

Instructions

  • Mix the chicken with smoked paprika, lime juice, 1 tsp salt and Rosemary and set aside.

Insta Pot Version

  • Using the sauté function, heat the Instant pot.Once hot add the oil.
  • Add the garlic and chopped onion.Saute till golden.
  • Add the marinated chicken and mushrooms.Mix it together and cook on high for 10 minutes.
  • Switch off the Saute function.Add 3/4 Cup* of water.
  • Add the tomatoes, quinoa, green capsicum.Check salt.Also add more chilli for extra kick.
  • Close the lid and pressure cook for 5 minutes.When finished cooking, quick-release pressure according to manufacturer’s directions

Pressure Cooker Version

  • Heat the pressure cooker on high.Add the oil.
  • Add onion and garlic. Saute till golden.
  • Add the Chicken thighs and brown it for 10 minutes.Add 3/4 Cup of water.
  • Add rest of the ingredients- mushrooms,capsicum,quinoa.Check the salt.Add more chilli for extra kick.
  • Pressure cook for 10 minutes

Notes

Reduce the amount of water to 1/2 Cup if you like drier consistency
