Foxtail Millet Salad

Faux couscous salad made from Foxtail millet

Ingredients

  • Foxtail millet-1 cup
  • Water-3 cups
  • Oregano-1 tsp
  • Red Pepper or Capsicum-1 sliced
  • Yellow Pepper or Capsicum-1 Sliced
  • Zucchini-½ Cup sliced
  • Cottage cheese/Feta-50 gms or half cup-diced
  • Parsley/Coriander-handfull
  • Olive oil-2 tsp
  • Extra Virgin Olive oil-1 tsp
  • Salt to taste

Instructions

  • Boil the Millet in salt water for 10-12 minutes.Cover and keep aside for 15 minutes
  • Heat Olive oil in a pan.
  • Add the vegetables with salt to taste and oregano. Saute till cooked.
  • Using a folk gentle mix the vegetables and millet.Add the cheese.
  • Drizzle extra virgin olive oil and mix well.
  • Serve hot or cold!
