Ingredients
Foxtail millet-1 cup
Water-3 cups
Oregano-1 tsp
Red Pepper or Capsicum-1 sliced
Yellow Pepper or Capsicum-1 Sliced
Zucchini-½ Cup sliced
Cottage cheese/Feta-50 gms or half cup-diced
Parsley/Coriander-handfull
Olive oil-2 tsp
Extra Virgin Olive oil-1 tsp
Salt to taste
Instructions
Boil the Millet in salt water for 10-12 minutes.Cover and keep aside for 15 minutes
Heat Olive oil in a pan.
Add the vegetables with salt to taste and oregano. Saute till cooked.
Using a folk gentle mix the vegetables and millet.Add the cheese.
Drizzle extra virgin olive oil and mix well.
Serve hot or cold!
