Kolrabhi and Apple Salad
Crisp Apple and Kolrabhi salad with yogurt fennel dressing
Kolrabhi Sliced Thin
Yogurt/substitute for coconut yogurt for a vegan/Paleo approved meal
Salt to taste
Slice the kolrabhi and apple in a food processor or using a mandolin.
Put them in ice water till you get the dressing ready.
Whisk the yogurt together with olive oil, fennel and salt.
Remove the kolrabhi and apples from the cold water using a colander.Tap the colander to remove excess water.
Add the dressing and mix well.
If serving later, let the apple and kolrabhi rest in the ice water.Mix with the dressing just before serving.
