Ingredients

  • 1 Cup Greek Yogurt
  • 1 Cucumber about ¼ cup after grating & squeezing the water
  • 2 tablespoon Chopped Dill
  • Salt to Taste

Instructions

  • Whisk the yogurt till its creamy and smooth
  • Halve the cucumbers. Remove the seeds and the core. Keep the skin on.
  • Grate the cucumber using the medium setting.
  • Add a pinch of salt and let it sit for 5 minutes.
  • Using a kitchen towel, squeeze the excess water out of it. Do this 2-3 times.
  • Add the grated strained cucumber to the yogurt.
  • Season with salt. Add the chopped dill. Mix it up.
  • Serve it cold with warm pita or chips

Notes

 

  • The cucumber needs to be strained well. Otherwise the dip will become runny.
  • This dip is served cold.
  • You can make this 1-2 days ahead of serving time. Store it in an air tight container in the refrigerator and serve it straight out of the fridge.
  • You can make the cucumber dip vegan by using coconut yogurt instead of Greek yogurt. If lactose is the issue, use lactose free yogurt.
 

Serve this Cucumber Dip with

  • Vegetables - Carrot Sticks, Celery , Sweet Peppers, Radish
  • Pita Bread - Either warm, toasted or make super quick pita chips in the air fryer
  • Chips - Store bought potato chips- spicy, crinkled or wafer thin. We love spicy chips with t this dip because the contrast of hot and cool is just mind blowing!
  • Warm Bread - Another great bread that you can serve with this dip is focaccia or even just toasted regular bread.
  • Potato wedges & French Fries - This is my secret to any party. Make them with minimal effort in the air fryer and serve hot. We love sprinkling some spicy peri peri spice mix on our french fries.
