Besan Laddu

Ingredients

  • ¼ Cup Ghee
  • 1 Cup Besan Gram Flour
  • ½ Cup Sugar or Bhoora or Karara
  • ½ teaspoon Cardamom Powder
  • 1 pinch Saffron
  • 2 tablespoon Slivered almonds or pistachios or Melon Seeds(Optional)

Instructions

  • Heat a flat pan on medium low heat.Add Ghee to the pan.
  • Once the ghee has completely melted, add the gram flour.
  • Roast the gram flour for 20-25 minutes till the flour changes color to goldenish brown and starts smelling nutty. Do this slowly and at a low flame.
  • Spread the mixture on a plate and let it cool down enough to be able to work with it.(not room temperature but still hot to touch)
  • Add Powdered Sugar & Cardamom powder, mix well.
  • Add any roasted slivered nuts & Seeds at this point.
  • When its still warm, Shape into bite sized balls.As it cools, it will become solid.
  • Store in an airtight container for upto 2-3 weeks outside or 2-3 months refrigerated.

Notes

Troubleshooting
If the laddus are not firm enough, keep the laddu mixture in the fridge for 10-15 minutes and try working with it after.
You would also add a little more roasted besan to the mixture.
If your laddus are melting or not retaining shape after making, keep them in the fridge for 15-20 minutes. They will firm up.
if you don't like nuts in the laddus, leave them out.
