Instant Pot Aloo Jeera

Ingredients

  • 250 gms New Potatoes or baby potatoes
  • 2 tablespoon Ghee or oil

Spices*

Instructions

  • In the instant pot, Add 1 cup of water.Place the Potatoes in steamer basket.
  • place the basket inside and close the lid.
  • Set the instant pot to PRESSURE COOK/MANUAL HIGH pressure mode for 5 minutes** in SEALED position. Let the pressure release naturally for 10 minutes, Quick Release after.
  • Take the potatoes out and drain the water.Peel the potatoes***

Instant Pot Sauteing

  • Select SAUTE mode now and heat the instant pot.
  • Once HOT, Add Oil and heat for 20-30 seconds.(important step for cumin)
  • Add the Cumin and Asafetida and let it splutter.
  • Add the potatoes and give gentle mix,Coat the potatoes with oil.
  • Add the Spice mixes & Salt - Turmeric,Coriander Powder,Chilli Powder,Dry Mango Powder or Amchur. Give it a mix so the spices coat the potatoes.Test salt, add more if needed.
  • Garnish with Coriander leaves and serve hot.

Non Stick Pan/Cast Iron Pan Saute****

  • Heat the pan.Add oil to the pan.
  • Once the oil is hot,Add the cumin and asafetida.Let it splutter for 30 seconds.(watch that it doesnt burn)
  • Add the cubed potatoes.To make them crisp- keep turning them and cooking for long.
  • Add the spices and mix.
  • Garnish with Coriander leaves and serve hot.

Notes

Spices*
Asafetida- is optional.
Coriander Powder,Turmeric and Chilli powder can be replaced with store-bought Curry powder.
Dry Mango Powder  or Amchur Powder can be replaced with lime/Lemon juice at the end.Just before you garnish with coriander leaves.
Jeera or Cumin Seeds- are the absolute essential.
GLUTEN FREE- skip Asafetida
DAIRY FREE-replace ghee with oil
Instant Pot Time for Boiling Potatoes**- This will change based on how big your potatoes are.If you are using larger than 1 inch potatoes, increase the time to 14 minutes.
Peeling the Potatoes*** - You can skip this step if your potatoes are bruise free and clean.Peeled potatoes will stick to the instant pot bottom more but will absorb the spices better.
Non Stick Pan/Cast Iron Pan Saute****
Nonstick pan or a cast iron pan is better for browning and sautéing the potatoes than the steel inner pot of instant pot.That said, it's another pot to wash.
