Ingredients

  • Eggs-2
  • Salt to taste
  • Onion-1
  • Mushroom-5-8
  • Cherry tomatoes-halved or normal tomato chopped
  • Medium low depth pan with a lid
  • Pizza Seasoning or dried mixed herbs
  • Olive oil-1 tsp
  • Water-2 tsp

Instructions

  • Break the eggs in a bowl.Add 2 teaspoon water.Whisk whisk whisk.Add Salt and pizza seasoning or herbs.Add oil on the pan.Swirl it around to coat it everywhere.
  • Add the onions and mushrooms.Saute till brown.This should take atleast 10-12 minutes.
  • Make sure nothing sticks to the pan.Move the veggies around.
  • Pour the egg mixture in the pan.Move the egg and veggies around to make the distribution equal.On a low-medium flame cook it covered with a lid for 3 minutes

  • At this stage the fritata should have risen a bit.Free the edges with a spoon or kinfe.
  • If you are a pro flip it.If you are like me then heat another skillet or a flat pan.Drizzle some oil and simply flip the pan on the skillet with the uncooked side down.Cook for another 2 minutes and you are done.
