Kolrabhi and Apple Salad

Crisp Apple and Kolrabhi salad with yogurt fennel dressing

Ingredients

  • 2 Kolrabhi Sliced Thin
  • 1 Apple-Sliced Thin
  • 1 tablespoon Yogurt/substitute for coconut yogurt for a vegan/Paleo approved meal
  • 1 teaspoon Olive Oil
  • 1 tablespoon fennel-Minced
  • Salt to taste

Instructions

  • Slice the kolrabhi and apple in a food processor or using a mandolin.
  • Put them in ice water till you get the dressing ready.
  • Whisk the yogurt together with olive oil, fennel and salt.
  • Remove the kolrabhi and apples from the cold water using a colander.Tap the colander to remove excess water.
  • Add the dressing and mix well.
  • Serve immediately.

Notes

If serving later, let the apple and kolrabhi rest in the ice water.Mix with the dressing just before serving.
