Chimichurri aioli

Chimichurri Aioli - Homemade aioli with a flavorful kick is the perfect dipping sauce for french fries, hotdogs, and burgers.

Ingredients

  • 1 Cup Parsley
  • 3 Tablespoon Red wine vinegar
  • 3 Cloves Garlic
  • 1 Teaspoon Red chili flakes or jalapeno or one red chili
  • ¾ Teaspoon Oregano
  • 1 Teaspoon Salt
  • 2 Tablespoon Olive Oil
  • ½ Cup Mayonnaise

Instructions

  • Add the garlic, parsely, red wine vinegar, chili and salt to the food procesor.Pulse till the parsley is finely shredded.
  • If you do not have a food processor- Finely chop the parsley and garlic with a sharp knife.
  • Add oil.(notice how we add less oil than traditional chimmichuri because of mayaonnaise)
  • Add this mix to the mayonnaise and give it a mix.
  • Taste test, add more salt or vingear if you need to.

Notes

Olive oil

In a regular chimichurri sauce, you will add about ½ cup of olive oil.
In the aioli, we have reduced that to 1 tablespoon because the mayonnaise has oil in it too.
