The first day was pretty difficult…it’s not easy to get around the fact that I can’t have any dairy, grains or legumes. I spent 1 hour yesterday roaming in Auchan looking for something that fit the rules of whole30…But aisle after aisle was a disappointment…I bought some chicken and lots of veggies..
One of my friends is studying Nutrition and she wasn’t quite sold on the idea of no legumes and diary and suggested I do a modified version by including legumes and yoghurt. I haven’t decided yet if I will do this yet but I will consider it down the line.
What I ate on day one
-Frittata with onions, tomato and basil
-Pan Fried chicken breast in peri peri spices with grilled sweet potato and pumpkin.
PAN FRIED CHICKEN BREAST IN PERI PERI SPICES WITH ROASTED SWEET POTATO AND PUMPKIN
-1 Chicken breast
-1 tbsp vegetable oil
-1 tbs Peri Peri spice mix
Roasted Pumpkin and Sweet Potato
-1 Sweet Potato
-100 Gms Pumpkin
-1 tbs Mixed herbs
-1 tbsp olive oil
-3 unpeeled cloves Garlic
-Parsley for garnish
-Combine all the ingredients for Roasted pumpkin and Sweet Potato in an oven pan.
-Roast in the oven for 15 min at 180 degrees and 10 min at 200 degrees and garnish with chopped parsley.
-Gently rub the chicken with the peri peri spices and Let it marinade for 20 minutes (if you have the time).
-Pan Fry in the grill pan for 3 minutes each side. Cover the chicken to let the middle cook. If this is the first time you are doing this cut the chicken from the middle to check the chicken is cooked through.
-Plate the chicken and veggies in a plate and enjoy your whole30 approved meal!!
Tomorrow I plan to make zucchini spaghetti for lunch.
