Do you guys like KFC? I only like the spicy chicken strips.Everything else is too oily or too bland or too battery(too much batter?:D) I do have a beautiful childhood memory of KFC though.I was probably 8 or 9 years old and my dad took us to this new burger place in town and I remember having the best burger on the planet!I still remember that orange color sauce in the burger which definitely beat the shit out of any Nirulas Burger.I am talking about the vegetarian burger guys..so I still don’t understand the hankering for a whole bucket of that oily chicken.
I especially don’t understand it when you can have a spicy crumb baked juicy chicken instead.I originally made this recipe with salty crushed biscuits instead of panko bread crumbs so if you don’t have panko crumbs you can let imagination run wild and use anything crispy.One of my friends suggested the same recipe with crushed nachos instead, so next time I am going to use the left over crushed nachos after a party.Oh and I almost forgot, Breadcrumbs are also an option.
If you fry the chicken it would obviously be ten times more crunchy but also add some extra padding to your waist.
- Chicken whole Legs-2
- Buttermilk-2 cups 1 part yoghurt 2 parts water
- Salt-1/2 tsp
- Peri Peri Spice-2 tbsp substitute with equal parts of garlic powder,tomato powder,onion and salt
- Panko Crumbs-1 cup
- Parsley-1 tbsp chopped
- Flour/Maida-1 cup
- Oil-1 tbsp
- Marinate the chicken legs with buttermilk and the salt for minimum 30 minutes and maximum 24 hours.
- Mix the panko crumbs with the peri peri spice and spread them on a plate.If you are using nachos then adjust the spices based on how the nachos are spiced.
- Break an egg and whisk it.Pour it on a plate.
- Spread the flour also on a plate.
- Coat the chicken (straight out of the marinade) with the flour.
- Dip the floured chicken in the beaten egg.
Drop the chicken in panko mixture and coat well.
- Place on a lined baking tray.
- Bake at 200 degrees for 40-45 minutes.
