We have started growing our own herbs in the balcony recently and I am so very proud to report that so far we have Basil,Sage,Celery and Thyme! I love having fresh herbs at hand especially basil but I hate throwing it away when it wilts.It barely lasts for 2-3 days.So growing them in my balcony is all the more exciting!

The seeds have been sourced from amazon and planted on our own in pots.
Now for the actual topic of the post.This is actually a salad but I have used the same ingredients along with chicken and cooked it instead.The inspiration for this post was the amazing produce I am finding in Bangalore nowadays.Such amazing premium tomatoes available now that you feel like celebrating them!

Before all the basil grew in my garden, I had a technique of saving the freshness and the flavor of the herb by freezing it.You grind the basil with equal amount of olive oil and freeze in normal ice-cube trays for 6-7 hours.Remove and store in a freezer bags for like forever!In this recipe I just placed one basil-olive oil cube straight out of the freezer and placed it on top of the chicken before baking it.
Oh and one more technique!This is going to be a picture heavy post.How to check if your chicken is cooked through without slicing through it.
Its called the – Finger Test.You can feel the chicken with your finger and find out how well it’s cooked by comparing it with your palm.
Raw Chicken-Press the area just below your thumb with your hand relaxed.If you chicken is of the same softness then its raw.
Rare Chicken-Press the area just below your thumb with your index finger and thumb together.If you chicken is of the same softness then it’s done rare.
Medium Cooked Chicken-Press the area just below your thumb with your Ring finger and thumb together.If you chicken is of the same softness then it’s cooked to medium.
Well Cooked Chicken-Rare Chicken-Press the area just below your thumb with your smallest finger and thumb together.If you chicken is of the same softness then it’s well cooked.Anything more will be overdone.
- 1 Chicken Breast
- 1 tbsp Olive Oil
- Handful Basil leaves
- 1 Large or 2 Small Tomatoes Julienned
- 1/4 cup of Feta Cheese or Cashew cheese if following paleo
- Salt to taste
Preheat the Oven.
Mince the basil leaves and olive oil in a motor and pestle alternatively you can grind them together in a food processor.
Make three shallow incisions on the chicken breast.
Layer the baking dish with tomato slices.Place the Chicken on top.
Crumble the Feta cheese/Cashew Cheese on top.
Drizzle the basil-olive oil.
Bake for 15-20 minute till the chicken is firm.
